Zucchini Lasagna Recipe
I love Italian food! This mock lasagna satisfies my cheesy, tomato-y, cravings for comfort food.
Zucchini ribbons replace the lasagna pasta sheets in this dish. Now, I'm not going to tell you that this tastes like pasta because it doesn't. It tastes like a vegetable but it doesn't have an overpowering taste and it takes on the flavors of what you put into it.
The delicious tomato sauce has ground chicken and there's a generous amount of cheese which makes this look, smell, and taste like lasagna.
So, please do give this a try for a quick and easy lunch or dinner. You will love it!
Zucchini Lasagna Recipe

INGREDIENTS
1 large onion, chopped
4 cloves garlic, chopped
Olive oil
1 kg/2lbs ground chicken
2 large cans tomato sauce
1 teaspoon salt or to taste
1 teaspoon black pepper or to taste
2 large zucchini, thinly sliced lengthwise
1/2 cup shredded Parmesan cheese
2 cup shredded mozzarella cheese
METHOD
In a large pot heat oil, and sauté onions and garlic until light brown.
Add ground chicken and fry on high heat for 20 minutes.
Add tomato sauce, salt, black pepper and simmer, covered for 20 minutes.
Preheat oven to 180C/350F.
Mix cheeses together and set aside.
Coat a 9x13 baking dish with the tomato sauce. Layer zucchini slices then tomato and ground chicken sauce then cheeses.
Repeat, ending with cheese.
Bake covered with foil for 45 minutes.
Uncover and bake until the top is brown and bubbly.
Tips and Bits
You can use ground beef or lamb in this dish.
Feel free to use more or less cheese.
