Tomato and Meat Curry Recipe
Tomato meat curry is one of my favorite Pakistani dishes. I love the spicy, succulent meat cooked with plenty of tomatoes.
You should cook this with bone-in pieces of lamb or mutton. Boneless meat just doesn't bring out the flavors in this dish.
This recipe is super easy to make but you do have to take your time sautéing the onions and allowing the meat and tomatoes to cook until tender. I'm a rice fan, so I enjoy eating tomato meat with steamed rice but you can eat it with roti or chapati too.

INGREDIENTS
1 kg/2lbs mutton
Cooking oil or ghee
1 large onion, finely chopped
1 teaspoon garlic paste
1 teaspoon ginger paste
1 teaspoon salt or to taste
1 teaspoon red chili powder or to taste
1/2 teaspoon turmeric powder
4 medium tomatoes, chopped
1/2 teaspoon coriander powder
2 green chilies
A handful of fresh coriander, chopped
METHOD
In a large pot heat oil or ghee and sauté onions until soft and translucent.
Add garlic and ginger pastes and sauté for 5 minutes.
Add meat and fry on high heat for 10 minutes.
Add salt, red chili powder, turmeric powder and fry for 5 minutes.
Add tomatoes and fry for another 5 minutes.
Turn the heat low and cook, covered until meat is tender.
Add coriander powder, chopped coriander and green chilies and simmer, covered for 5 minutes.
Tips and Bits
If you don't have fresh tomatoes you can use canned tomatoes. Adjust salt as canned tomatoes can be a bit salty.
Please roast and grind whole coriander seeds to a powder. The aroma and taste are much better than store bought coriander powder.
