Thin Noodles and Chicken Recipe
Years ago I was introduced to this light, savory, noodle dish by my friend Saadia. I like the mix of Eastern and Western flavors and the fact that it is so easy to make.
I have added boneless chicken cubes to Saadia's recipe to make it a complete meal. I’ve been making these noodles for my family and friends for years, and they love them.
The noodles are very fine, delicate strands which cook in minutes making this a quick and simple dish to put together. I encourage you to try these delicious noodles with or without the chicken. The fragrant curry leaves and lemon-y tang may just make this a favorite dish in your house too!
Thin Noodles and Chicken Recipe

INGREDIENTS
Cooking oil
1/4 teaspoon mustard seeds
4 cloves garlic, finely chopped
1 small onion, chopped
2 chicken breasts, cubed
1/2 teaspoon turmeric powder
1 teaspoon salt or to taste
1 bag short, fine noodles
1 lemon, juiced or slightly more if you like it sour
A handful of fresh coriander, chopped
2 green chilies, chopped
5-6 fresh curry leaves
METHOD
In a large frypan, heat oil and add mustard seeds. As soon as they splutter, add garlic and onion and sauté 2 minutes.
Add chicken breast, turmeric powder and salt and cook on medium heat for 15 minutes.
While the chicken is cooking, boil noodles according to directions.
Mix noodles and chicken together. Add lemon juice, fresh coriander, green chilies, and curry leaves.
Tips and Bits
3 teaspoons grated coconut can be added to this dish when folding in the noodles
These noodles are great for pot luck, a picnic or a packed lunch for school or office
