Spicy Oven Grilled Chicken Recipe
I am always trying to find exciting, tasty chicken dishes to cook for my family. This spicy, tender chicken explodes with tantalizing flavors.
I marinate boneless chicken breasts in the morning and grill them in the evening. You can use any part of the chicken, boneless or with bone.
We eat this chicken with mint yogurt and naan, but it's great in wraps or on it's own with a side salad.
This is a simple recipe. You can marinate the chicken for hours or overnight and you can grill the chicken in the oven (like I do) or on a barbecue grill.

30 Minutes (plus marinating time)
INGREDIENTS
6 boneless chicken breasts
4 tablespoons full fat yogurt
1 tablespoon garlic paste
1 tablespoon ginger paste
3 large lemons, juiced
1 1/2 teaspoons salt or to taste
1 1/2 teaspoons red chili powder or to taste
1/2 teaspoon black pepper
1 teaspoon paprika powder
1 tablespoon gram flour
4 tablespoons cooking oil
1 tablespoon melted butter
METHOD
In a large bowl, preferably one with a cover, mix yogurt, garlic paste, ginger paste, lemon juice, salt, red chili powder, black pepper, paprika, gram flour and oil.
Add chicken, mix, cover and chill several hours or overnight in the fridge.
Allow the chicken to come to room temperature before grilling.
Preheat oven to broil.
Lay chicken pieces on a baking sheet and place on top most rack in the oven.
After 10 minutes turn chicken pieces over.
After 7-10 minutes, take out of oven and brush chicken breasts with butter.
Tips and Bits
Grind fresh garlic and ginger separately into pastes and store in airtight containers in the fridge.
Grind black peppercorns. Store in airtight container.
Don't broil chicken too long or chicken breast will dry out. It's been marinating so it will cook quickly.
