Simple Thai Fish Recipe
I started making this simple recipe years ago to try to get my family to eat more fish. The tender pieces of fish with sweet and spicy sauce have become a favorite in my house.
I use frozen fish, bottled sauce, bell peppers and a few other simple ingredients which makes this a super easy recipe. I serve the fish with steamed rice but you can eat it with noodles or on its own.
This is a delicious, speedy meal to put together after a busy day so please give it a try and let me know how you like it!

INGREDIENTS
3 fish fillets, cut into medium sized pieces
4 cloves garlic, finely chopped
1 lemon, juiced
1/2 teaspoon salt
Cooking oil
3 fresh lime leaves
1 stick lemongrass, cut in half
1 bottle Thai sweet chili sauce
1/2 red bell pepper, cut in pieces
1/2 yellow bell pepper, cut in pieces
A handful of coriander, chopped
METHOD
In a bowl, mix half the chopped garlic cloves, lemon juice and salt and mix with the fish pieces.
In a large frypan, heat oil and lay the fish in the pan in a single layer.
After 2 minutes, turn the fish over. After another 2 minutes, take the fish out on a plate and set aside.
In the pan, add more oil, remaining garlic, lime leaves and lemongrass and sauté for a few minutes.
Add chili sauce and sauté for a few minutes.
Add fish back in the pan and spoon the sauce over each piece.
Add bell peppers and coriander and simmer for 5 minutes.
Tips and Bits
You can use fresh fillets for this recipe.
I use White Fish or Cream Dory.
