Simple Meat Curry Recipe

Succulent, spicy mutton cubes in thick gravy taste great with roti or rice.

My kids are meat eaters so I'm always thinking of different meat dishes to cook. This is a super easy recipe and doesn't take much time to cook as long as you have good quality, lean meat.


I've made this with boneless mutton but you can make it with lamb or beef, boneless or with bone to suit your taste. It's a satisfyingly, delicious meal with some daal and a vegetable side dish.

INGREDIENTS

  • 1kg/2lbs mutton, cubed

  • Cooking oil

  • 1 large onion, finely chopped

  • 1 teaspoon garlic paste

  • 1 teaspoon ginger paste

  • 1 teaspoon salt or to taste

  • 1 teaspoon red chili powder or to taste

  • 1/2 teaspoon turmeric powder

  • 1 cup hot water

  • A handful of fresh coriander, chopped

  • 2 green chilies, chopped

METHOD

  1. In a large pot, heat oil and sauté onions until light brown.

  2. Add garlic paste, ginger paste, salt, red chili powder and turmeric powder and sauté for 5 minutes.

  3. Add meat and fry on high heat for 10 minutes.

  4. Add water and cook covered, on low heat for 45 minutes until meat is tender.

  5. Turn heat up high and fry for 5 minutes until oil rises to top and some of the liquid dries up.

  6. Add coriander and green chilies.

Tips and Bits

Separately grind garlic and ginger into pastes and store in fridge for a couple months. The taste is far superior to store bought pastes.


Freeze leftovers in freezer bag.
