Quick Boneless Chicken Curry Recipe
I make this super easy, super quick, super tasty chicken dish when I want to serve my family a wholesome meal but just do not have the time to be extravagant.
If you have all the ingredients on hand this dish really takes no time at all.
It’s not a traditional chicken curry but it’s just as tasty with rice or chapati.

INGREDIENTS
1 kg/2lbs boneless chicken breast, cubed
Cooking oil
1 large onion, finely chopped
1 teaspoon garlic paste
1 teaspoon ginger paste
1 tomato, chopped
3 tablespoons full fat yogurt
1/4 teaspoon turmeric powder
1 teaspoon salt or to taste
1 teaspoon red chili powder or to taste
A handful of fresh coriander, chopped
2 tablespoons dried fenugreek leaves (optional)
METHOD
In a large pot, heat oil and sauté onions until soft and translucent.
Add garlic paste, ginger paste and fry for 5 minutes.
Add tomatoes and fry until soft.
Add yogurt and fry until you have a creamy paste.
Add turmeric powder, salt and red chili powder.
Add chicken and mix well. Turn heat low, cover and cook for 20 minutes or until chicken is tender.
Add fresh coriander and fenugreek leaves (optional)
Tips and Bits
Keeping some frozen naan on hand is helpful for quick meals like this.
Feel free to add more tomatoes and or yogurt if you like.
