Pound Cake with Lemon Glaze Recipe
You will love this buttery, moist pound cake with or without the lemon glaze so please do give it a try.
Today is a very special day for me because it is my youngest child, Raaid's, 13th birthday. He is the apple of my eye and the cutest kid in MY world.
Unlike the rest of us who love our cakes, cookies, pies and just about anything sweet, Raaid is a bit picky. One of his favorite desserts is my simple pound cake with lemon glaze and I love making it for him.
I like making loaf cakes because they last a day or two but are not so big that I don't know what to do with them. Especially, now since there are only 3 of us living in the house for the better part of the year.
The best thing about this recipe is the lemon glaze on top that tastes just like Lemonheads…you remember the bright yellow, sweet and sour candies that were sold at the movie theater?
Pound Cake with Lemon Glaze Recipe

INGREDIENTS
1 cup butter, softened
2 1/2 cups caster sugar
5 eggs, room temperature
1 tablespoon vanilla
1/2 teaspoon salt
3 cups flour, sifted twice
1 teaspoon baking powder
1 cup heavy cream
2 cups powdered sugar
3 lemons, juiced
METHOD
Preheat oven to 180C/350F.
In a bowl, mix salt, baking powder and flour and set aside.
In another bowl, cream butter and sugar until pale and fluffy.
Add one egg at a time until combined.
Add vanilla and heavy cream and mix on low speed until just combined.
Add salt, baking powder and flour and mix until just combined.
Pour into a greased and floured loaf pan.
Bake this for about an hour, but check after 45 minutes as every oven is different
Cool completely.
In a medium bowl, add powdered sugar and mix lemon juice a teaspoon at a time until you get a smooth, thick consistency.
Generously drizzle glaze on top of cooled cake.
Tips and Bits
You can omit the glaze and serve this with whipped cream and berries.
This cake freezes well without the glaze.
