Orange and Onion Salad Recipe
This salad is so colorful and refreshing that one cannot help but devour the whole platter.
I made it with Navel oranges but it works well with Valencia oranges as well. It's super simple to make, just make sure you carefully peel and slice the oranges so the slices are not mushy.
The onion adds a nice bite to this juicy, sweet salad and the olive oil ties all the flavors together, wonderfully.
This is an ideal salad served with some sandwiches for a light lunch.

INGREDIENTS
3 oranges, peeled and sliced
1 onion, peeled and sliced
2 tablespoons olive oil
1/2 teaspoon salt or to taste
A handful of parsley, finely chopped
METHOD
On a plate, layer the orange slices and onion rings.
Drizzle olive oil and sprinkle salt and parsley over the top
Tips and Bits
You need a super sharp knife to cut clean orange slices.
This salad needs to be prepared right before serving.
