No-Bake Pistachio Tart Recipe
I have to warn you, the crunchy base and green, pistachio-y cream make this dessert addictive and the mascarpone cheese adds a whole level of deliciousness.
I was scrolling on Instagram one day and came across this beautiful tart by Pina Bresciani. My Father and my Husband love pistachio and since my Father is visiting, I thought what better time to make this luscious tart.
Pina's recipe calls for Amaretti cookies which are not available in Dubai so I used Digestives, but I urge you to use Amaretti if you can find them. I also tweaked a few of the measurements to suit my taste.
The best thing about this no-bake dessert is it looks just as good as it tastes and is so quick and easy. So, the next time you want to wow your family and friends this is the recipe to reach for!
No-Bake Pistachio Tart Recipe

TOTAL TIME
30 Minutes (plus chilling time)
INGREDIENTS
For the Crust
• 225g box Digestive Biscuits, finely ground
• 1/2 cup butter, melted
• 1/4 teaspoon salt
• 1/3 cup brown sugar
For the Filling
• 3/4 cup whipping cream
• 1 cup pistachio cream
• 1 1/4 cup mascarpone cheese, room temperature
• A handful of pistachios to garnish (optional)
METHOD
Line a 9" springform pan with baking parchment. In a large bowl, add ground crumbs, butter, salt and brown sugar and mix until combined.
Press into pan, flattening with the bottom of a glass, to make even. Chill in fridge while you mix the cream filling.
Whip the cream to stiff peaks.
Mix the pistachio cream and mascarpone cheese.
Fold whipped cream into the pistachio mixture until combined.
Spread on top of the crumb base.
Chill for several hours.
Top with pistachios (optional).
Tips and Bits
You can make this in any pan or dish if you don't have a 9" springform pan.
This is a good make-ahead dessert as it keeps well in the fridge for several days.
Pistachio cream comes in a jar like peanut or almond butter. It can be found in the specialty food section in the grocery store or Italian grocery stores.
