Meatball Sub Recipe
I'm a huge Friends fan and still binge watch whenever I want to unwind. One weekend afternoon, I was struggling to think of what to serve for lunch. I happened to be watching the 'Ride Along' episode...so I made meatball subs!
Fortunately, I had my safety meatballs in tomato sauce in the freezer, which I defrosted. Remember to always freeze meatballs or bolognese sauce...trust me, they can be lifesavers for times when you just don't feel like cooking or get unexpected guests.
In my opinion, it's the soft, squidgy bread that makes the meatball sub so remarkably tasty. I don't always get Provolone cheese here in Dubai, so I use Mozzarella which is equally delicious.
This recipe takes only 20 minutes if the meatballs are already prepared. These meatballs subs are great for a quick and easy lunch or dinner, so give them a try!

INGREDIENTS
2 Sub rolls or Hoagie rolls
4 meatballs in sauce, heated
2 slices of Provolone cheese or Mozzarella cheese
Extra sauce for dipping
METHOD
Preheat oven to 200C/400F.
Slice open rolls.
Take each meatball and cut in half.
Lay meat ball halves in a line on the open roll.
Spoon some sauce on top of the meatballs.
Lay cheese on top.
Wrap tightly in waxed paper or foil.
Heat in oven for a few minutes or until the bread warms up and the cheese melts.
Tips and Bits
I've used chicken meatballs but you can use beef meatballs if you prefer.
This tastes great with hot pepper rings laid on top of the meatballs.
You can toast your sliced roll in the oven before filling with the meatballs and cheese.
I like to put a small bowl of marinara sauce on the side for dipping.
