Lauki/Bottle Gourd Raita Recipe
This lip smacking yogurt side dish is one of my favorite varieties of Pakistani raita. Lauki or bottle gourd is a low calorie, nutritious vegetable. When mixed with protein-rich yogurt it makes for a healthy dish
I ate this delicious raita for the first time years ago when my cousin's wife made it. She served it with deep fried, crispy puri flatbread and I couldn't stop mopping up the spicy, cool yogurt with piping hot bread.
It really doesn't get easier than this so please give this lauki raita a try, you are gonna love it!
Lauki/Bottle Gourd Raita Recipe

INGREDIENTS
1 medium sized lauki/bottle gourd
2 cups full fat yogurt
1/2 teaspoon salt or to taste
Sugar to taste (optional)
2 green chilies, finely chopped
A handful of coriander, finely chopped
For the Tempering
2 tablespoons oil
2 cloves garlic, sliced
3-4 dried, red chilies
1/2 teaspoon cumin seeds
6-7 fresh curry leaves
METHOD
Peel and grate the lauki/bottle gourd on the large holes of a hand grater.
Squeeze water out of the grated lauki/bottle gourd.
In a large bowl whisk yogurt, salt and sugar (optional), until creamy.
Add green chilies, coriander and lauki/bottle gourd and mix until combined.
In a small frypan heat oil, add garlic and red chilies. Fry on medium heat until the garlic turns light brown.
Add cumin and let it splutter for a few seconds.
Turn off heat and add curry leaves.
Pour over yogurt and serve.
Tips and Bits
If you are not making the raita right away, wrap the grated lauki/bottle gourd in a tea towel and store in fridge.
You can add red chili powder instead of or in addition to the green chilies.
You don't need to temper this with the oil and spices if you don't want to.
