Grilled Cheese and Tomato Soup Recipe

Grilled cheese and tomato soup conjure up childhood memories for me, especially coming home from school on a cold Winter's day and sitting in front of the TV, warm, happy and carefree.

Remember the days when canned tomato soup, squidgy white bread and Kraft American Singles were kitchen staples? Well, these three items are still in my pantry and fridge all the time.

These days, there are a variety of fancy ways to prepare this classic. For me, nothing beats perfectly grilled white bread glued together with American cheese and dipped into hot tomato soup. It's a winning combination that I not only enjoyed as a child, but also fed my own kids.

Grilled cheese and tomato soup with some veggie sticks and a glass of milk. This is a great go-to recipe when you need to throw something together quickly for your kids!

SERVES

1

TOTAL TIME

10 Minutes

INGREDIENTS

  • I can tomato soup, prepared according to directions on can (I use Campbell's)

  • 2 slices, Kraft American Singles

  • 2 slices, white bread

  • Butter, softened

METHOD

  1. Heat a frypan on low heat.

  2. Unwrap the two slices of cheese and place between the two slices of bread.

  3. Generously spread butter on both sides of the sandwich and place in the frypan.

  4. Grill sandwich for about 5 minutes until golden brown, without turning or pressing down on it.

  5. Flip the sandwich and do the same for the other side.

  6. Slice in half to dunk in soup or in cubes to drop into soup like croutons.

Tips and Bits

You can substitute your favorite cheese. I suggest finely grating, if your cheese is hard, to allow for even melting.

Spreading mayonnaise on both slices of bread, then placing cheese slices makes this sandwich creamier.
