Garlic and Egg Fried Rice Recipe
I know fried rice is generally eaten as a side dish but I think it makes a satisfyingly filling main dish as well. It can be a balanced, wholesome lunch or dinner packed with protein and fiber.
I am a rice eater and I love fried rice. When I lived in Singapore I was introduced to tasty rice dishes, two of my favorites being olive rice and pineapple rice.
This garlic fried rice is super easy with minimal ingredients but jam packed with flavor. I make this with egg but feel free to make it with cooked chicken, shrimp or beef. Next time you are strapped for time or have leftover rice in the fridge, give this fried rice a try.

INGREDIENTS
8 cloves garlic, finely chopped
Cooking oil
2 tablespoons butter
2 large eggs, beaten
Salt to taste
2 cups cooked, cold rice
3-4 spring onions chopped
1 teaspoon sesame oil.
METHOD
In a wok or frypan, heat oil and butter and sauté garlic making sure it does not brown.
Add egg and scramble.
Add salt.
Add rice and fry on high heat, mix continuously.
Add spring onions and sesame oil and mix until combined.
Tips and Bits
You can also make this with brown rice.
This is also good with frozen mixed vegetables.
