Four Cheese Pasta Recipe
This dish is the ultimate in cheesy pastas with a mix of Mozzarella, Parmesan, Gruyére and Blue cheeses. So, if you are a cheese lover like me, REJOICE!
A couple of years ago, Sami and I went on an amazing trip to Cape Town. While we were there, I ate this rich, creamy, cheesy, pasta dish at a restaurant called Mario's. It was one of those dishes where you "ooh" and "aah" after every bite.
At Mario's the dish was served with gnocchi, but I've decided I prefer it with penne pasta. This is so delicious on it's own that I can't think of anything to serve alongside, except maybe some crusty bread to wipe up the sauce!
Four Cheese Pasta Recipe

INGREDIENTS
1 packet penne pasta, prepared according to directions (reserve pasta water)
For the Sauce
2 tablespoons butter
1 garlic clove, finely chopped
1 1/2 cups heavy cream
2 cups full fat milk
1/2 teaspoon salt or to taste
1/2 cup Mozzarella cheese, grated
1 cup Gruyére cheese, grated
1/2 cup Parmesan cheese, grated
1 teaspoon Blue cheese or more to taste
METHOD
In a large pot, melt butter and sauté garlic for a few minutes.
Add cream, milk and salt and cook on low heat for 5 minutes.
Take off heat and add Mozzarella, Gruyére, Parmesan and Blue cheeses and mix gently until cheeses melt.
Mix sauce and pasta together.
If too thick, thin out sauce with reserved pasta water.
Tips and Bits
You can add even more cheese if you like.
You can make this with gnocchi or any pasta of choice.
Don't cook sauce after adding cheeses as it will split.
Very gently, heat leftover sauce in a sauce pan over low heat mixing until warm.
