Easy Sliced Potatoes Recipe
If you want a quick and easy vegetarian side dish then look no further because it doesn't get better than this.
I love sliced potatoes for this recipe, I think they look and taste so much better than cubed. This is delicious eaten with puri or with rice and daal.
This is one of those recipes that is so simple and so flavorful that you will want to keep it in your back pocket to make again and again.
Easy Sliced Potatoes Recipe

INGREDIENTS
2 large potatoes, peeled and sliced
Cooking oil
1 medium onion, finely chopped
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon salt or to taste
1/2 teaspoon red chili powder or to taste
1 teaspoon whole cumin seeds
A handful of fresh curry leaves
Water
A handful of fresh coriander, chopped
2 green chilies, chopped
METHOD
In a large frypan, heat oil and fry onions on low heat until light brown.
Add turmeric powder, coriander powder, salt, red chili powder, cumin seeds and curry leaves.
Add 1 cup water and fry on medium heat until you get a thick gravy.
Lay potatoes in the pan. With a spoon, top the onion mix over the potatoes and add 1 cup water.
Cover and let cook on low heat until the potatoes are tender but not falling apart.
Add fresh coriander and green chilies.
Tips and Bits
You can add lemon juice at the end.
Add water sparingly, you can add more as needed.
