Easy Meatloaf Recipe
Meatloaf is classic, American comfort food at its best. Whether you serve it with creamy, mashed potatoes and green peas or between two slices of bread you have a deliciously filling meal.
Every recipe has ground meat, something to bind, liquid and seasoning. Other than that it's an open field and you can play around with countless additions and variations.
Meatloaf is a quick and easy lunch or dinner. It stores in the fridge for a few days so you can pack up sandwiches for work or school!

INGREDIENTS
1 kg/2lbs ground beef
2 slices bread broken up into small pieces
1 cup full fat milk
Cooking oil
1 tablespoon butter
1 large onion, finely chopped
5 cloves garlic, chopped
1 stalk celery, peeled and finely chopped
1 carrot, finely chopped
2 large eggs, beaten
1 teaspoon salt or to taste
1 teaspoon black pepper or to taste
A handful of fresh parsley, chopped
For the Glaze
3 tablespoons brown sugar
4 tablespoons ketchup
1 tablespoon Worcestershire sauce (optional)
METHOD
Preheat oven to 200C/400F.
In a bowl, soak bread in milk and set aside.
In a frypan, heat oil and butter and sauté onions, garlic, celery and carrot, until soft. Set aside to cool.
In a large bowl, mix the cooled veggie mixture, eggs, soaked bread, salt, black pepper and parsley.
Gently fold in the ground beef until combined, do not over mix.
Pat ground beef mixture into a loaf on a baking sheet or a loaf baking pan.
Bake, covered for 40 minutes.
In a bowl, mix brown sugar, ketchup and Worcestershire sauce (optional).
Take meatloaf out of the oven and spread glaze on top.
Bake for another 10 minutes, uncovered.
Take out of oven and allow to rest for 15 minutes before slicing.
Tips and Bits
You can make this with ground chicken too.
You can use seasoned bread crumbs or crackers soaked in milk instead of bread if you prefer. Ritz Crackers or Saltines are good options.
If there is excess liquid just pour into a small saucepan and reduce until thick.
I love this between two slices of bread with ketchup and potato chips!
