Easy Chicken Salad Sandwich Recipe
Cold, creamy chicken salad with a crunchy bite, encased in soft, white sandwich bread is all I need for a quick fix anytime of the day.
Sandwiches are great for lunch, dinner or a snack. I like to serve them with a cuppa, when I have guests over for tea.
I've made these super quick and easy sandwiches with poached chicken breast and a few simple ingredients but really sky's the limit with these chicken salad sandwiches so play around and make them your own.
I often make an entire loaf and store them in an airtight container and they last for a couple of days. My family loves opening the fridge and grabbing a quick snack whenever hunger pangs kick in!

INGREDIENTS
2 chicken breasts, poached and cooled
2 stalks celery, peeled and finely chopped
4 tablespoon full fat mayonnaise
1 teaspoon salt or to taste
1/2 teaspoon black pepper or to taste
16 slices of white sandwich bread
METHOD
Finely shred or chop the chicken.
In a large bowl, mix chicken, celery, mayonnaise, salt and black pepper and mix until combined.
Spread on a slice of bread, top with another slice of bread, cut off crusts and cut in half or fours.
Tips and Bits
You can use leftover roast chicken for these sandwiches.
The add-ins are endless but a few of my favorites are dried cranberries, slivered almonds, spring onions, green chilies.
You can store these in an airtight container topped with a damp paper towel to keep the bread from drying out.
