Chocolate Chip Cookie Recipe
I love cookies! I cannot say it enough. I can make a meal out of cookies. My favorite being the original black and white OREO cookie. Twist apart, lick off all the white and eat all the black!
Today though, I'd like to share my recipe for chocolate chip cookies. These chocolate chip cookies are slightly crispy on the outside, moist and chewy when you bite into them, and loaded with chocolate chips. They are melt- in -your -mouth delicious!
My dear, childhood friend Nasreen makes the best chocolate chip cookies...they look perfect and taste perfect. My kids once said to me, "why can't you make cookies like Nasreen Aunty?"
So, here's my recipe, adapted from Modern Honey, with a few minor tweaks. Not as good as Nasreen's but pretty close. 😉

TOTAL TIME

INGREDIENTS
1/2 cup butter, cold and cubed
1/2 cup shortening
1 cup light brown sugar
1/2 cup +2 tablespoons sugar
2 large eggs
1 teaspoon vanilla
2 3/4 cups flour
1 teaspoon cornstarch
3/4 teaspoon baking soda
3/4 teaspoon salt
2 cups semi-sweet chocolate chips
1/2 cup milk chocolate chips
METHOD
In a large bowl, cream butter, shortening, brown sugar and sugar until light and fluffy.
Add eggs and vanilla and mix until combined.
Add flour, cornstarch, baking soda and salt and mix until combined.
Fold in chocolate chips.
Wrap cookie dough in plastic wrap and chill for 24 hours.
Preheat oven to 195C/385F. Line a baking sheet with baking parchment and scoop cooking dough onto baking sheet.
Bake 8-10 minutes until edges are golden brown and tops are no longer shiny.
Remove from oven and let set for 5 minutes before carefully transferring to cooling rack. These will stay fresh for 3 days in an airtight container and can be reheated in the microwave for 5 seconds.
Tips and Bits
Always wait until the cookie sheet is cooled before putting another batch in the oven.
These are yummy with sea salt sprinkled on top.
You can add nuts with the chocolate chips.
To freeze cooking dough, form into balls and freeze on cookie sheet. When frozen, store in freezer bags.
