Chicken Parmesan Recipe
Chicken parmesan is a juicy, cheesy, saucy one-dish meal that's great for lunch or dinner.
I love that this dish can be customized in so many different ways to suit everyone's taste, time, effort and budget. You can make this with frozen cutlets instead of making your own, you can bake the cutlets instead of frying them, you can use bottled sauce instead of making your own, you can use grated mozzarella instead of the buffalo mozzarella that I have used.
You can serve this with spaghetti or a side of steamed veggies.

INGREDIENTS
Olive oil
2 cloves garlic, finely chopped
2 cans good quality Italian tomato sauce
1 teaspoon salt or to taste
1/4 teaspoon chili flakes or to taste
4 boneless chicken breasts
1/2 teaspoon salt or to taste
1/2 teaspoon black pepper or to taste
2 tablespoons flour
2 large eggs, beaten
2 cups bread crumbs
Oil for frying
2 balls fresh buffalo mozzarella, sliced
1 package spaghetti, boiled according to directions
METHOD
Preheat oven to 180C/350F.
In a large pot, heat olive oil and sauté garlic for a few minutes.
Add tomato sauce, salt and chili flakes and cook on medium heat for 10 minutes.
While sauce is cooking, coat chicken breasts with salt and black pepper.
Dredge each chicken breast in flour, dip in egg and coat with breadcrumbs.
Fry one side for 5 minutes until browned, turn and fry the other side.
Lay chicken in baking dish, spoon sauce on top and bake for 15 minutes, covered with foil.
Take off foil, top with cheese and bake until cheese melts.
Toss spaghetti in a little sauce and serve on the side.
Tips and Bits
This keeps well in the fridge for up to 3 days so you can enjoy leftovers.
