Chicken and Sun-Dried Tomato Pasta Recipe
If you love pasta and love quick and easy recipes even more, then this is going to become your go-to recipe for weeknight dinners.
I used to make this pasta often when I lived in Singapore and even though we enjoyed eating this delicious dish, I stopped making it over the years. Until today! Now, I'm going to make it part of my monthly pasta rotation.
I know you will love this simple and tasty pasta dish as much as I do!
Chicken and Sun-Dried Tomato Pasta Recipe

INGREDIENTS
4 chicken breasts, boneless, cubed (if they are large use 3)
3-4 cloves garlic, peeled and minced
Oil for cooking
1 teaspoon salt or to taste
1 cup sun-dried tomatoes, finely chopped
2 cups full fat sour cream
A handful of fresh basil leaves
1/2 cup parmesan cheese, finely grated or more if you prefer
Dry red chili flakes, ground to a powder (optional)
1 bag of penne pasta, boiled according to package directions
METHOD
In a frypan, heat oil and sauté garlic for a few minutes, making sure it doesn't turn brown.
Add chicken and salt and cook covered, on low heat until the chicken is very tender.
Add sun-dried tomatoes. Break up tender chicken with cooking spoon and mix well with tomatoes.
Add sour cream and mix well.
Take off the heat, add basil, cheese and dry red chili (optional) and mix.
Mix with pasta right before serving.
Tips and Bits
You can omit the chicken if you want to keep this vegetarian.
Mushrooms, asparagus and fresh baby spinach leaves are all good vegetable additions.
Cut chicken into small cubes so it cooks faster.
