Cheese Spring Rolls
Craving something fried, crispy and cheesy? Look no further, these rolls are so satisfying and tasty.
I have been making these for years, especially during Ramadan because my kids love them for Iftar. I make a big batch and freeze them so I always have them for when the craving hits.
The filling for these spring rolls is easy to mix up, but rolling them takes a bit of time so maybe make them on a day when you have an hour or so to spare. My filling is only cheese, but you can experiment with different add-ins.
Next time you want something delicious for iftar, or a snack with a cup of tea, enjoy these cheese rolls with your favorite dipping sauce.

INGREDIENTS
1 packet of large, square spring roll wrappers (I buy two in case some of the wrappers tear or dry up)
2 boxes full fat Philadelphia cream cheese
1/2 cup Mozzarella cheese, grated
1/2 cup sharp Cheddar cheese, grated
1/2 teaspoon salt or to taste
1/2 teaspoon chili flakes or to taste
Flour and water, mixed into a paste to seal rolls
METHOD
In a large bowl, mix together all three cheeses, salt and chili flakes until combined.
Take the wrappers out of the packet and cover with a damp paper towel or tea towel, so they don't dry out as you roll.
Keep a baking sheet or tray ready to place the rolls as you make them.
Keep another damp paper towel or tea towel to cover the prepared rolls, so they don't dry out.
In a small bowl, mix flour and water to make a paste to seal the rolls.
Place the wrapper as a square or a diamond. I place as a diamond as it's easier for me to roll.
Place two teaspoons of the filling, near the point closer to you, spreading about the length of a finger.
Start rolling from the point closer to you.
Overlap one side to the center, then overlap the other side to the center.
Continue tucking and rolling to the end.
Dip your finger into the paste and spread a little on the edge of the wrapper to seal.
Separate each layer with plastic wrap or waxed paper, so the rolls don't stick together.
Deep fry or freeze until solid and store in freezer bags.
Tips and Bits
You can use feta cheese for these rolls but decrease the salt as feta is quite salty.
Don't overfill or the rolls will start oozing when fried.
Use the solid block of cream cheese and not whipped cream cheese.
