Broccoli Cheddar Soup Recipe
As you know, I'm an all-year-round soup eater, so just because Dubai is in the height of summer doesn't mean I'm not going to eat soup!
Broccoli cheddar is one of my all-time favorite soups. If I lived in America, I would probably have never made this soup. I would have just hopped over to the closest Panera and gotten my fill because Panera has THE best broccoli cheddar soup.
This is a quick and simple soup to make, especially since I use frozen broccoli. I like to keep my vegetables a little chunky and firm, but you can puree this soup if you prefer a smooth texture. Do try making this delicious, filling soup for lunch or dinner with some crusty bread on the side.

INGREDIENTS
1 small onion, finely chopped
1 tablespoon cooking oil
3 tablespoons butter
3 tablespoons flour
1 vegetable stock cube
2 cups hot water
3 cups whole milk
1 carrot, grated
2 cups frozen broccoli, thawed and chopped
1/2 teaspoon salt or to taste
1/2 teaspoon black pepper or to taste
1/4 cup heavy cream
1 cup extra sharp cheddar cheese, grated
1/4 cup grated extra sharp cheddar cheese for garnish (optional)
METHOD
In a large pot, heat oil and sauté onions until soft.
Add butter and flour and mix on low heat until combined.
Add vegetable stock cube.
Slowly add water, whisking until smooth.
Slowly add milk, whisking until smooth.
Add carrots, broccoli, salt and black pepper and simmer on low heat, covered for 20 minutes.
Take off heat, add cheddar cheese and mix until cheese melts.
Add heavy cream.
Serve hot with extra cheddar cheese sprinkled on top (optional).
Tips and Bits
Sharp or mild cheddar can be used instead of extra sharp.
You can use fresh broccoli if you prefer. Steam until tender and chop.
