Apple, Celery and Fennel Salad Recipe
I absolutely love salads and I'm always on the look out for different veggie and fruit combos to shake up my salad repertoire.
The other day I tried this apple and fennel salad, which I have to say was not well presented but tasted good. I love to eat different dishes in restaurants or people's homes then try to recreate the dish in my own kitchen.
Salads are all about texture and the thinly sliced apples, celery and fennel are appealing in this salad. I sliced mine with a sharp knife, but you could also use a mandolin.
The tang of the green apple and the aniseed flavor of the fennel pair together beautifully and I add celery for more crunch. Please try this salad and let me know how you like it!
Apple, Celery and Fennel Salad Recipe

INGREDIENTS
1 stalk celery, peeled and thinly sliced
1 medium bulb fennel, thinly sliced
1 green apple, thinly sliced
A handful of mixed greens of your choice
For the Dressing
2 teaspoons olive oil
1 teaspoon apple cider vinegar
1 teaspoon wholegrain Dijon mustard
2 teaspoons honey
1/4 teaspoon salt or to taste
METHOD
In a large bowl, mix celery, fennel, apple and greens together.
In a small bowl, mix olive oil, apple cider vinegar, mustard, honey and salt until thick.
Drizzle dressing on top of the vegetables and gently fold. You may not need all the dressing.
Tips and Bits
Make sure to add dressing right before serving or salad will be soggy.
Candied walnuts or pecans add a wonderful crunch to this salad.
You can crumble blue cheese on top of this salad.
If you don't like the wholegrain mustard, you can use smooth Dijon mustard.
