Tuna and Sweetcorn Sandwich Recipe
One of my all-time favorite sandwiches was tuna and sweetcorn and years later, still is.
I love sandwiches, so when I moved to London, I was thrilled to see prepackaged, chilled sandwiches in all the grocery stores and corner stores.
I remember being out for afternoons with my kids and popping into Marks and Spencer's to pick up some sandwiches to eat in the park. The sandwich fillings in London were pretty far out, and I soon realized that pretty much anything can go in a sandwich!
At first I thought tuna? And sweetcorn? What kind of weird combination is that? But one bite and I was hooked. This is super easy and quick, so give it a try for lunch at home, work, school, or on the road—you won't be disappointed!
Tuna and Sweetcorn Sandwich Recipe

10 Minutes
INGREDIENTS
1 can tuna, drained
1/2 cup corn
2 tablespoons full fat mayonnaise
Salt to taste
Black pepper to taste
4 slices white or brown bread
Butter to spread on the bread (optional)
METHOD
In a medium bowl, mix the tuna with a fork.
Add corn, mayonnaise, salt, and black pepper.
Spread a thin layer of butter on both slices of bread (optional)
Spread 1/2 the tuna and sweetcorn filling on a slice of bread and cover with another slice.
Cut in half and serve.
Tips and Bits
You can add chili flakes for some zing.
You can use flatbread or pita bread to make a wrap.
You can use frozen or canned corn for this recipe.
